<p>it&#8217;s essentially a big fluffy sweet sponge cake held up with a LOT of egg white.  Apparently Betty Crocker did one in the 70s/80s in Canada that my lovely other half was partial to eating when his mom made it.  I&#8217;m a bit of a packet cake snob, and when a cake is as easy as this, who wouldn&#8217;t be.  I think if you wanted to play around with it and cut this cake up to make a shaped kid&#8217;s birthday cake, it would work pretty well too &#8211; it is tough enough / not too crumbly at all while still being pretty light.  And because it&#8217;s so light (and sweet) it&#8217;s one of the only cakes I&#8217;ve ever made where my two year old has actually eaten the whole piece of cake and not just the icing!</p>

<h3>ingredients</h3>
<p>1 cup (240g) cake flour (*see note)<br />
¾ cup + ¾ cup white sugar (177g + 177g)<br />
12 egg whites (room temp for best whipping &#8211; but they are easier to separate when cold.  Also as even the smallest speck of yolk will make them not whip up well, suggest you separate them one by one into a second bowl before adding to the rest of the whites in the main bowl &#8211; it would be a shame to get to the 12th egg and get some yolk in!)<br />
1 ½ teaspoon vanilla extract (and optionally ½ teaspoon almond extract)<br />
1 ½ teaspoon cream of tartar<br />
½ teaspoon salt</p>
<h3></h3>
<h3>equipment</h3>
<p>25 cm (10 inch) angel food cake tin OR ring tin OR bundt tin.  A tin with a hold in the middle!<br />
stand mixer / hand-held beaters<br />
a bottle or something to invert the cake tin onto so it &#8216;hangs&#8217; upside down</p>
<h3></h3>
<h3>method</h3>
<ol>
<li>Preheat the oven to 190°C (375°F). Make sure that your 25cm (10 inch) ring tin (or special angel food cake tin if you have one!) or bundt tin is clean and dry.   Basically you need a tin with a hold in the middle so the cake cooks evenly and isn&#8217;t gooey in the middle!  Do not grease the tin.  The ungreased tin allows full rising as the cake sticks to the sides on baking and the tin then holds the cake &#8216;out&#8217; to stop it collapsing.</li>
<li>Sift together the cake flour and ¾ cup of the sugar, set aside.</li>
<li>In a very large <em><strong>very clean</strong></em> bowl (any amount of oil, dishwashing liquid or residue could deflate the egg whites), beat the egg whites along with the vanilla, cream of tartar and salt, to medium stiff peaks.  You could try this by hand but there is quite a bit of mixing, so a stand mixer works best, but you could do it with a hand-held if needed.</li>
<li>Gradually add the remaining sugar while continuing to whip to stiff peaks.</li>
<li>When the egg white mixture has reached its maximum volume, fold in the sifted ingredients gradually, one third at a time. Do not over-mix.</li>
<li>Put the batter into the ring pan. Bake for 40 to 45 minutes in the preheated oven, until the cake springs back when touched.</li>
<li>Balance the tube pan upside down on the top of a bottle, to prevent decompression while cooling. Yes, this sounds strange, but the cake is so light it won’t ‘fall’ out of the pan while cooling even though it is inverted.</li>
<li>When completely cool, run a knife around the edge of the pan and invert onto a plate.</li>
<li>Serve with fresh or poached fruit in season and whipped cream or a strawberry or passionfruit style syrup-sauce.  Or for kids with whipped cream and sprinkles!  We served with fresh whipped cream (with a small amount of icing (confectioner&#8217;s) sugar and vanilla extract added).</li>
</ol>
<h3>notes</h3>
<ul>
<li>to make ‘cake flour’ – measure 2 tablespoons corn flour then add plain (all-purpose) flour to make up one cup (240g) total.  Sift 4 or 5 times until very well combined.  The cake flour has a lower protein content than normal flour and should be a lot lighter.</li>
<li>there is a lot of mixture – it overfills my 23 cm bundt cake tin</li>
<li>apparently (according to someone in my house) you also need to add a small amount of sprinkles to the cake mixture (as you mix in the flour) so that the cake is flecked with little colourful bits.  I&#8217;d say about 2 tablespoons would do it.</li>
<li>This cake is super-sweet.   Hence the decoration / serving with poached fruit.   No need for icing on this baby.</li>
<li>Egg yolks? Got a few left over after making this cake?  How convenient that this cake goes so well with ice cream!  Make a batch or two.  Or some home made custard.  Or a creme pattisserie to fill a fresh lovely custard tart.  Or a batch of choux pastry nuns filled with custard.   Mmmm.  So many options!</li>

<p>Little O helped stick the paper on with sticky tape, and drew some lovely &#8220;O&#8221;s on a piece of paper to make a card.  Because we  need to wrap a special present for Daddy because it is his birthday tomorrow.</p>
<p>Then we had to hide the present.  Because it isn&#8217;t Daddy&#8217;s birthday until Thursday morning.  Tomorrow morning.</p>
<p>Then we had to find somewhere to hide the present.  Because we don&#8217;t want Daddy to know about it until Thursday morning. Tomorrow morning.</p>
<p>We decided (O decided) that a good spot was under his dressing table.  Little O insisted on hiding it there himself.  He dropped the heavy gift about 5 times getting it up the hallway.  Because it was heavy.  Because hiding it under the dressing table Daddy won&#8217;t know and won&#8217;t see it when he comes home.  And we can give it to him in the morning.</p>
<p>&#8230;.</p>
<p>&nbsp;</p>
<p>Daddy comes home about 10 minutes later.  Little O jumps out of bed, calling,</p>
<blockquote><p>&#8220;Daddy, Daddy.  You&#8217;re home.  We have your present for your birthday but it&#8217;s hidden under there,&#8221; points to the dresser, &#8220;and it was very heavy and I carried it down the hall and mummy said be careful but we can&#8217;t give it to you until tomorrow but it&#8217;s a secret because it&#8217;s your birthday and it&#8217;s a bit heavy and we wrapped it and drew some O&#8217;s and it has some paper and sticky tape and we mustn&#8217;t tell you because it&#8217;s a secret for your birthday, alright?&#8221;</p></blockquote>
<p>In one big single breathed monologue.</p>

<p>Luckily he didn&#8217;t know what it was when we were wrapping it &#8211; he&#8217;d never seen a tortilla press before.</p>

			<content:encoded><![CDATA[<p>One of the songs O sings in music class is about a little box.  As part of the song, someone chooses something to come out of the box, and then it makes a noise.  Cue this week&#8217;s contribution from little O:</p>
<blockquote><p>Music Teacher: &#8220;O, what would you like to be in the box today?&#8221;</p>
<p>O: &#8220;Boonie.  Boonie in the box.&#8221;</p></blockquote>
<p>Boonie is one of little Luna&#8217;s nicknames in our house.  Nothing to do at all with the Australian cricketer.  Just &#8220;Luna Boona&#8221; gets shortened to &#8220;Boonie&#8221;.  It&#8217;s an Australian thing.</p>
<p>&nbsp;</p>
<p>The teacher looks a little confused, who wouldn&#8217;t with someone saying &#8220;Boonie&#8221; as though you should know what that is.</p>
<p>&nbsp;</p>
<p>I point to Luna&#8217;s head to indicate he means her.   Then wonder if I should be encouraging a song where my second child is put in a box.  Oh well.  The teacher goes on:</p>
<blockquote><p>&#8220;Baby? Oscar wants to put a baby in the box.  That&#8217;s a good idea.  What should the baby say when it comes out? Wah, wah, wah?&#8221;</p>
<p>Oscar: &#8220;No. Baby&#8217;s don&#8217;t say &#8216;wah, wah, wah&#8217;.  They say &#8216;boobie, boobie, boobie&#8217;.&#8221;</p></blockquote>
<p>At this point the teacher cracks up laughing so hard she can&#8217;t talk for a minute.  She tries to regain her composure as she says:</p>
<blockquote><p>&#8220;Oscar&#8217;s right, babies do say &#8216;boobie, boobie, boobie&#8217;.  Everybody, let&#8217;s put the baby in the box now ..&#8221;</p></blockquote>
<p>And we all proceeded to sing the song and then say &#8220;boobie, boobie, boobie&#8221; when the baby came out of the box.  Nice.</p>
<p>&nbsp;</p>
<p>Another breastfeeding is just the norm in our household snippet bought to you from the mouth of a babe.</p>

			<content:encoded><![CDATA[<p>Some days the babe sleeps for but 45 minutes at a stretch before for some reason or other we need to get in the car and go somewhere or gets woken by something (or someone)&#8230;  Not like the first lucky child who had a bit of a routine and actually two good-length daytime sleeps until he was over 1.</p>
<p>&nbsp;</p>
<p>But some days I do get a bit of a break when the older one is at daycare, and the younger one actually goes to sleep for a bit.  It&#8217;s hard to plan anything, because you just never know what is going to happen, but sometimes it&#8217;s just fun to pretend the sleep will a bit and just get stuck into doing something that it would be impossible to contemplate getting done with a baby underfoot.</p>
<p>&nbsp;</p>
<p>This week I had two days where sleep happened.</p>
<p>&nbsp;</p>
<p>The first day, I did the tax.  Well, when I say, &#8220;did the tax&#8221;, what I actually mean is get all the bits of paper and emails and other nasty things that need to be gathered to complete &#8220;the tax&#8221;, write a letter to the accountant explaining what I couldn&#8217;t find, put it in an envelope and label it &#8220;Urgent&#8221;.  Because of course I&#8217;ve left it so long that it is now somewhat urgent (oops, sorry).</p>
<p>&nbsp;</p>
<p>The second day, I made a pie.  Yes, a pure escapism from reality PIE.  <strong><span style="color: #339966;">Lime marshmallow pie</span></strong>. And totally forgot to take a photo, so all you&#8217;ll get is the last-remaining wedge photo from the day after (we had people over people, we didn&#8217;t consume the whole thing ourselves &#8211; just in case you were wondering).</p>

While his sister is still content to just spin about on the floor, sit up and have things brought to her by her wonderful big brother.</p>

<p>Luna is a self-contented, calm, observant and very happy little person.  Oscar at the same age was much more rambunctious, loud and MOBILE!</p>

			<content:encoded><![CDATA[<p>It&#8217;s been a while since I posted, but International Women&#8217;s Day today seemed a good day to get back into it.   Life has been taking up all of our time here in our little cocoon of a life in Brisbane.</p>
<p>&nbsp;</p>
<p>So what better way to celebrate than to start with a photo of the two wonderful women in our little family in our typical family setting &#8211; chaos and eating in the kitchen/dining:</p>

<p>And, inspired by <a href="http://www.picklebums.com" target="_blank">Kate over at Picklebums</a> I&#8217;ve decided to draw on our good fortune and loan a small-ish sum of money to another woman who really needs it (<a href="http://picklebums.com/2012/03/08/stand-up-and-do-something-good-return/" target="_blank">as Kate has</a>).  So I&#8217;ve looked at how to<a href="http://www.goodreturn.org/get%20involved/IWD%202012"> get involved at Good Return</a> and decided to loan some money (they have a 100% loan return rate so far) to someone who lives in Nepal, a country I&#8217;ve been fortunate enough to visit (and loved).</p>

			<content:encoded><![CDATA[<p>So, we went down to Sydney the other day. And I have to say, travelling with the 2.5 year old is pretty easy. <strong>When you have the iCrack.</strong></p>
<p>Yes, my son has his own &#8220;phone&#8221;. Albeit an old iPhone of mine that is now about 4 years old. And I wouldn&#8217;t travel without it. He has child-friendly volume-limited headphones, and knows how to work it.</p>
<p>I&#8217;ve worked out how to download stuff from our PVR (yes, I love you <a href="http://www.icetv.com.au/">icetv recorder</a>) onto the phone, so it comes with a ready supply of 2 year old tv addiction: current favourites include a number of <a href="http://www.peppapig.com/">Peppa Pig</a> episodes (now the tune is going to be stuck in my head for the rest of the day, AGAIN. After only just writing the title.. Aargh), the old and faithful <a href="www.abc.net.au/abcforkids/sites/playschool/">Play School,</a> a <a href="http://www.thomasandfriends.com/au/index.html">Thomas</a> or two, and a <a href="http://www.charlieandlola.com/">Charlie and Lola</a>.  Then there is YouTube, which he watches on a wireless connection, but only things we&#8217;ve &#8220;favourited&#8221;&#8230; But I have to keep an eye on that usage, as one or two inadvertent button presses and hey presto some highly inappropriate content beams straight down to him (and I&#8217;m sure we&#8217;ll get to that at some stage in life, but 2.5 is just too young).</p>
<p>In addition to that, there are some games to play with.  Which I have spent all of 1 hour searching for and wanted to have some kind of educational component..</p>
<p>The current top hits at our house for games (which I happily pay for as it is the best bribery ever to have 10 minutes of game on the phone) are:</p>

<p>I don&#8217;t currently have any games that require you to &#8220;download&#8221; or &#8220;purchase&#8221; bits and bobs, but have set-up permissions just in case he inadvertently pokes a button to buy &#8220;gems&#8221; or some other virtual crap (see <a href="http://www.bestkidsapps.com/tips-for-parents/in-app-purchases-and-kids/">this handy guide</a> on how to set permissions if you haven&#8217;t done so already).</p>

<p>The monkeys were a hit.  Baby monkeys playing.  </p>
<p>I personally like the chimps.  The fact that a school excursion group was throwing a banana or two into the enclosure made them (I suspect) somewhat more active than they might have been at that time of day otherwise&#8230; mmm..</p>

			<content:encoded><![CDATA[<p>One of the first things we did after meeting (nearly 12 years ago now) was to go camping.</p>
<p>And one of our first purchases together was a tent.  We spent hours choosing a tent together.</p>
<p>I remember the occasion like it was yesterday.</p>
<p>&nbsp;</p>
<p>I wanted a tent that would have enough room in the front vestibule that you could cook a meal, sit on the ground and hang-out if it just poured for the days you were camping.  Chris wanted a tent that you could almost/mostly stand up in.  We had very limited funds.  And no car: so whatever camping we were doing was by public transport or the generosity of friends.</p>
<p>&nbsp;</p>
<p>Our first trip we lugged the new tent <span id="more-3261"></span> across to Stradbroke Island from our house: walk, train, bus, ferry, bus, walk.   It was a brilliant trip.</p>
<p>&nbsp;</p>
<p>And it has been a brilliant tent that has served us really well.  For almost 12 years.  In rain, it was big enough to hang out in the front and cook and play cards.  I think we even managed to squeeze 6 of us in for a card game one rainy trip.  Without getting wet bums.  You could mostly stand up inside.</p>
<p>And it has stood the test of innumerable camping trips: beaches, mountains, raining, really raining, sunny, torrentially raining, sandy, muddy, festival-ly, <a href="http://www.my-speck.com/2009/01/01/happy-new-year-and-happy-15th-week-of-gestation/">across the harbour in choppy water in a very overcrowded boat</a>&#8230;</p>

<p>But <a href="http://www.my-speck.com/2011/10/31/camping-yay/">last time we went camping</a> it seemed that for a growing family of four, things were a little tight.  Tight like waking up with a sleep-moving toddler draped across your face.</p>
<p>&nbsp;</p>
<p>So we&#8217;ve upgraded.  After a lot of thought, we decided we wanted a tent with lots of room, that would still fit a standard national park / camping ground campsite size, and that would have a separate sleeping/eating-playing-whatever-when-it-is-raining area in&#8230;</p>

<p>And the test-drive was good.  Nice trip for a few days, &#8220;glamping&#8221; at Lake Moogerah with a Grandma and a Barry close by in a shed.  Good relaxing.</p>

<p>Not sure that it will stand up that well in a really wet camp (we opted for size and configuration over our second-choice tent which was much better quality).. But hey, that just makes for a better camping story.  Right?</p>

<p>&nbsp;</p>
<p>It is O&#8217;s first day back to kindy this year today.   I have to admit that I am feeling more than slightly relieved.   It&#8217;s hard to keep two of them at completely different stages occupied during the days when it is 32°C outside.  Things go a little crazy.  I do find solace in the knowledge that it&#8217;s<a href="http://www.baby-mac.com/2012/01/theres-no-place-like-it.html"> not just in our house we are suffering from post-christmas craziness</a>&#8230;</p>
<p>This morning I had a lovely 5 minutes to myself to drink a cup of tea.  I sat down and thought about a post I&#8217;d like to write.  A nice, cheery, makes me happy kinda post.  So I came into the study to download the photos to the computer for the post.  Then, BAM &#8211; this is what I found on the camera:</p>

<p>Nice. There were more, close-ups, but I figured I&#8217;d spare you those (thanks Husband for the lovely memories &#8211; preserving those special moments on camera is joyous, is it not?).</p>
<p>Still with me? (I&#8217;m expecting a large proportion of you to have stopped reading after the photo. Hey, it&#8217;s gross. But it&#8217;s also the life of a parent of a small child. Real. And the story is a little humorous.)</p>
<p>&nbsp;</p>
<h2>The backstory (get-it? I seem to be developing my husband&#8217;s appalling sense of humour)</h2>
<p>So I&#8217;ll take you back to early the morning of the photo of the poo in the hall &#8211; as I was showering.</p>
<p>Enter little O, boldly striding into the bathroom with a big work ethic and helpful smile.</p>
<blockquote><p>&#8220;Hi Mum!  Are you having a shower?&#8221;</p>
<p>&#8220;Yes.&#8221;</p></blockquote>
<p>O looks around and notices that the toilet roll is empty (mmm blame someone who shall remain nameless),</p>
<blockquote><p>&#8220;Mum, this is empty.  Don&#8217;t worry, it is my work.  I will get another one.&#8221;</p></blockquote>
<p>He then proceeds to take the old empty toilet roll off the wall, puts it carefully in the rubbish bin in the bathroom, goes the to the cupboard, gets a new roll of toilet paper, carefully hangs it, all while humming happily to himself.</p>
<blockquote><p>&#8220;Mum! I&#8217;m finished.  I got a new one and fixed it!&#8221;</p>
<p>&#8220;Why thank-you darling.  Excellent job.&#8221;  I say.</p></blockquote>
<p>And off little Poogie trundles, out of the bathroom off to the next adventure / his &#8220;job&#8221;.</p>
<p>And I think to myself, in a very smug and self-satisfied way,</p>
<blockquote><p>&#8220;Awesome, I&#8217;ve trained a little boy to do the toilet paper roll.  Hands-down beats his dad.&#8221;</p></blockquote>
<p>&nbsp;</p>
<p>&nbsp;</p>
<p>Which of course was the precursor to the poo in the hallway above.  My self-congratulatory thoughts and a lack of touching wood is what I think caused it.  In reality perhaps it was the brain of a two and a half year old trying to cope with the following contradictory thoughts:</p>
<blockquote><p>&#8220;mmm.  I need to poo.</p></blockquote>
<blockquote><p>mmm.  Best get to the toilet &#8221; (He has pooed in the toilet for 12 months now with the number of accidents countable on one hand)</p></blockquote>
<blockquote><p>&#8220;mm.  I&#8217;m in my bed and it is sleep time.  Not allowed to get out of bed or leave the bedroom during sleep time.</p></blockquote>
<blockquote><p>ah.  Really need to poo.  Aaah.  Mum is going to be mad if I leave the bedroom.</p></blockquote>
<blockquote><p>Ah.  Need to poo.  Need to poo.</p></blockquote>
<blockquote><p>Aaaaahhh.   That feels better.&#8221;</p></blockquote>
<p>While this was going on I was working at my computer, his Dad was doing the same in the kitchen.  With both kids asleep (so I thought), the house was very quiet.  Then I heard a great big ripping fart noise.   And called out,</p>
<blockquote><p>&#8220;Disgusting, was that you??&#8221;</p></blockquote>
<p>So it was only after I heard the answer,</p>
<blockquote><p>&#8220;No!&#8221;</p></blockquote>
<p>That I stuck my head around the door to look down the hallway.  And saw a little boy standing above that poo in the picture.  Looking forlornly at me.  Saying,</p>
<blockquote><p>&#8220;Sorry Mum, I did a poo.  It&#8217;s on the floor.&#8221;</p></blockquote>
<p>&nbsp;</p>
<p>&nbsp;</p>
<p>And it was all I could do to keep myself from peeing myself with laughter.</p>
<blockquote><p>&#8220;Mum, I did a POO!&#8221;</p></blockquote>

<p>We read a lot of books. Every morning little Poogie (2.5 years now) typically brings a bunch into the bed with me, we get little Sister Boona (6 months now!) and have a bit of a read. Then there are more during the day, at bedtime etc.</p>
<p>We have a relatively large number of books, and are constant library users, but Poogie still seems to know most of them by heart. Which I think is pretty impressive. It is to me anyway, still breastfeeding with now non-existent short-term memory.</p>
<p>So last week I was reading one of our favourites, <a href="http://www.penguin.com.au/contributors/24/pamela-allen">Australian Author Pamella Allen</a>&#8216;s &#8220;<a href="http://www.penguin.com.au/products/9780140509397/lion-night">A Lion in the Night</a>&#8220;, and we were up to this page:</p>

			<content:encoded><![CDATA[<p>Yep, that is how we say it around our house: <strong><em>Gingerman Bread</em></strong>.</p>
<p>It&#8217;s very funny to watch kids try to wrap their tongues and heads around funny phrases and words. Especially when they are your own kids and you can just laugh out loud&#8230;</p>
<p>Last year <a href="http://www.my-speck.com/tag/canada/">when we went to Canada</a> to celebrate Christmas with our Canadian family in the snow, we visited some friends in Vancouver on the way through who had the MOST amazing gingerbread house and scene ever made. Let me tell you. It was amazing. (Note I&#8217;m having to tell you rather than show you as I&#8217;m such a numpty I forgot to take a photo of the wonderful creation.)</p>
<p>They make one each year, and keep it up on display without snacking or nibbling for a few weeks over Christmas, and when the kids go back to school in early Jan they take it in as a treat for all the kids to eat together. And I was inspired &#8211; I&#8217;ve always wanted to do one.</p>
<p>So last week I emailed them and got the recipe for the gingerbread and icing, and started to think about making it&#8230; Then realised that although it would be fun for me, the two year old in our family would LOVE to help and the house construction and decoration is just a little bit beyond his decorating ability, patience-level and possibly balancing skills. I could forsee typhoon-struck ginger-house with icing dripping from gables aligned with the floor&#8230; (I&#8217;ve also been wondering about how a gingerbread house would &#8216;hold up&#8217; here in humid Brisbane&#8230; In Canada the humidity is so low you have to have a humidifier on. Here you can almost drink the air some days. I&#8217;m not sure that any gingerbread house would have a long-life without &#8216;growing&#8217; some of it&#8217;s own extra-special green decorations.. Anyone have experience with this is Australia??)</p>
<p>So I embraced the idea of just having fun with it and opted for gingerbread christmas shapes.</p>
<p>We invited O&#8217;s little cousins and grandma from Canada over and away we cooked. There was lots of mixing, measuring and then cutting.</p>

<p>Then baking.</p>
<p>Then decorating. I put a sheet of baking paper out for each child, in front of them at the kitchen table, and three bowls each for the toppings: smarties, sprinkles and heart decorations. Then a big smear of royal icing on their baking paper and a small palette knife each, and they were off.</p>

<p>We were planning on gifting some that O had decorated himself to O&#8217;s teachers and a few other people. On reflection, after witnessing the licking of palette knife, fingers and smarties that went into putting his together, I decorated a few myself to give on his behalf&#8230;</p>
<p>But I still love the creations, licks and all!</p>

<p>P.P.S. I am now planning on making the making of these (and a gingerbread house when the kids are bigger) a Christmas tradition in our house. </p>
<p>P.P.P.S.  And you may ask &#8211; where was the little baby during all of this?  Alternately happily rolling around on the floor, breastfeeding and sleeping.  She really is a dream child&#8230;. !</p>

<p>we went to your end of year Kindy (daycare but we call it kindy) art show last week.  And it rocked.  I unfortunately didn&#8217;t manage to get any photos on the day in the rooms as when we went there was literally a tropical thunderstorm absolute downpour in progress and we got soaked legging it from the house to the car to the show and thus didn&#8217;t drag the camera along though the sheets of water falling from the sky.</p>
<p>&nbsp;</p>
<p>It was a fundraiser for the kindy, so we had to bid on the items we wanted.  Not surprisingly, we bought a bunch of the pieces of art you have down throughout the year at the wonderful daycare you go to for three days a week..  I thought I&#8217;d take a few photos of some of your pieces to share.</p>

<p>My favourite is the sculpture.  I had it beside my bed so that I could see it when I woke up, but you wanted to play with &#8220;my boats&#8221; so I had to hide it a bit higher (as selfishly I want to keep it for myself)..</p>
